WASHINGTON – Mmm … pumpkin.

Your favorite fall-related flavor is in just about everything this time of year. In fact, The New York Times reports pumpkin offerings last year soared to sales of more than $290 million, according to Nielsen.

But what really creates that delectable taste in your pumpkin-flavored coffee, candy or cookie? The Times says in many cases, that’s a secret most people may not know.
