Solutions to fix Thanksgiving dinner disasters

Kristi King, wtop.com

WASHINGTON – With Thanksgiving dinner it seems something always goes wrong.

Start carving a bird and discover it’s still raw? An easy fix is to cut it into pieces spread on a baking sheet and bake.

Reader’s Digest has a list of tips and tricks for common Thanksgiving dinner concerns.

No roasting rack? To keep a bird from stewing in its own juices roll foil into a 3-foot rope than coil it into a ring.

To save space on the stove cook some items ahead of time. And store in crock pots side dishes such as mashed potatoes, rice pilaf, candied yams and cranberry sauce.

To fix dry stuffing, pour in stock, cover with foil and bake. Cure lumpy gravy with a blender or sieve.

Have a small oven but lots of guests? Roast two turkeys.

Prevent soggy pie crust by brushing the bottom with beaten egg white. Or bake it a bit before adding the filling.

Reader’s Digest says it’s all-time best Thanksgiving tip is for a succulent bird: Roast the turkey upside down.
